Billy

Billy Thorens, was born in 1988 in a countryside village in Switzerland, surrounded by farms, animals and fresh produce. This environment cultivated in him strong values, a solid work ethic, and a deep appreciation for quality.

After serving in the army, and graduating in International Hospitality Management, he gained culinary expertise in the kitchen of a Michelin-starred restaurant, where he refined his understanding of precision in gastronomy.

He then moved to Dubai, where he worked as a restaurant manager and sommelier at the prestigious One&Only Royal Mirage, mastering the art of luxury service. His career later took him to the vibrant W Barcelona, further enriching his experience. Along the way, he expanded his skillset to barista and interior designer.

Today, as the founder of Billy Brunch, Billy blends his global experience with his dedication to top notch service.

Since 2018, Billy Brunch has been all about honoring tradition, especially French 5* Hotels breakfasts, a touch of international classics and a Mediterranean twist.

We believe great service comes first, making sure every guest feels welcomed and at home. From the moment they walk in, they are warmly greeted by the entire team, inclusive chefs behind their open kitchen counter. Our menu is full of locally sourced ingredients, celebrating both the quality of the produce and the skill behind it. We serve breakfast all day, every day.
